Shrimp with cocktail sauce
- Combine no-sugar ketchup, horseradish to taste, lime juice
and fresh ground pepper.
Oven roasted chicken
- We have a few variations of chicken - rosemary/lime, garlic
lemon, worcestershire.
- Wash whole chicken, pat dry. Coat inside and out with
olive oil, ground pepper and garlic mixture. Pierce limes
with a fork and put them in the cavity, along with some slivers
of onion and garlic. Cook at 425 for about an hour and a
half - check with meat thermometer after the first hour.

are on the "leanest" list. Life is good.
- Slow roasting in the oven or on the bbq keeps the meat moist
and flavorful. I use hickory or mesquite chips in the gas
grill's smoker drawer. If you charcoal barbecue, Smart &
Final has great mesquite charcoal.
